Rustic farro soup with mushroom

_MG_02011 12 oz. box Litelife Smart ground
1/3 C. cooking sherry
12 oz mushroom
1/2 cup quick cooking farro
1 14.5 oz can Italian style diced tomatoes
2 cups stock
4 medium carrots, diced
1 small onion, diced
2 tbsp olive oil
3 large garlic cloves, minced
5 C. stock
1/2 tsp. dried oregano
1/2 tsp. smoked paprika
1/2 tsp. dried rosemary
1 tsp thyme
1/2 tsp salt
freshly ground pepper, according to taste
2 C. baby spinach

Hat 2 tbsp olive oil in a large pot. Add onion and garlic, saute until soft (5-7 minutes) on medium heat. add ground soy, break up and saute for 2-3 minutes. Add oregano, paprika, rosemary, thyme, salt and pepper and saute 1 more minute. Add carrots, cooking sherry, diced tomatoes, stock and farro, bring to a boil. Lower heat to a simmer and cook for 5 minutes. Add mushroom and spinach, simmer for 5 more minutes. Adjust seasoning and serve.
