Seafood udon noodle soup

IMG_00141 tbsp wakame reconstituted in about 1/4 cup cold water for 4-6 minutes
1 14.2 oz. package udon noodles (I used Ka-Me Udon Stir-Fry Noodles)
1/2 package mixed seafood (I used Trader Joe’s frozen seafood mix of shrimp, calamari and scallops)
1 tsp dashi
4 cups water
1 tsp fish sauce
1 tbsp Tamari
2 carrots, sliced thinly on the diagonal
3-4 scallions, sliced

In a large pot, heat water and dashi until boiling. Add wakame, fish sauce, Tamari, carrots and seafood and boil for 3-4 minutes. Add udon noodles, boil for one more minute. Add scallions and serve.
