1 cup whole wheat pastry flour (I used white whole wheat)
2 teaspoons sugar
1 tablespoon baking powder
1/4 teaspoon salt
2 tablespoons sweetened coconut flakes
1 cup milk
1/4 teaspoon coconut extract (optional, but good)
1 1/2 tablespoons melted coconut oil or vegetable oil
Mix the dry ingredients in one bowl.
Whisk together the liquid ingredients (milk, oil, extract and egg) in another bowl.
Combine until just mixed.
Make the coconut pancakes as you would any other pancake. Enjoy!
