Burmese spaghetti with ground soy

_MG_0531sm2 medium onions, chopped
4-5 cloves garlic, chopped
1 1/2 in. piece ginger, peeled and minced
1/2 to 1 tsp. cayenne pepper
1 tsp turmeric
2 C. coconut milk
2 tsp dark sesame oil
2 packages Lightlife Smart Ground Original
3/4 C. water, plus more as needed
1 tbsp fish sauce
salt
1 lb. spaghetti

Accompaniments – choose at least 2:
chopped green onions
chopped fresh cilantro
lemon or lime wedges
ground or crushed red chiles

In a blender or food processor combine 1/2 the onions with the garlic, ginger, cayenne to taste, turmeric and coconut milk. Process until the solid ingredients are finely minced, set aside. In a wok, over medium-high heat, heat the sesame and peanut oils. Add the remaining onions and stir fry 6 or 7 minutes or until browned and tender. Add the ground soy and cook for 4-5 minutes. Add the coconut milk mixture, 3/4 C water and fish sauce. Bring to a simmer, reduce the heat to medium-low, cover and cook for 30-40 minutes, or until the liquid has turned into a thick, somewhat oily gravy and the spice flavors are blended. Check occasionally and add more water as needed. Season with salt to taste.Serve immediately or cool and cover for up to two days.
Cook spaghetti according to package directions. Top spaghetti with sauce and accompaniments.
