1 1/2 C spelt flour
1/2 C whole wheat flour
1/2 C sugar-in-the-raw or organic cane sugar
1/2 C finely ground flaxseed
1 tsp cinnamon
1 tsp baking powder
1 tsp baking soda
1/2 tsp sea salt
3 very ripe bananas, mashed
1 large egg, lightly beaten
1/4 C coconut oil, melted
3/4 C milk
1 C fresh or frozen blueberries
Preheat oven to 350 Fahrenheit.
In two large bowls, separately mix dry (flour, sugar, flax, cinnamon, baking powder/soda, salt) and wet (bananas, milk, coconut oil, egg) ingredients.
Add wet ingredients to dry, stirring just until mixed. Stir in blueberries.
Spoon into a muffin pan lined with paper.
Bake for about 20 minutes — check to make sure they are done.
