Almond and spelt vanilla tea cakes

IMG_00013/4 cup whole almonds
1/4 cup powdered sugar
3/4 cup spelt flour
3/4 cup organic cane sugar
1/2 teaspoon baking powder
1/4 teaspoon salt
1 vanilla bean
4 egg whites
1/2 cup canola oil

Preheat oven to 350 degree Fahrenheit. Butter and flour mini bundt cake or muffin tins, set aside.
In a small food processor, grind almonds with powdered sugar until finely ground. In a large bowl, mix almonds, flour, cane sugar, baking powder and salt. Scrape the seeds from the vanilla bean, and mix well. Add egg whites and oil, and mix just until combined. Spoon batter into tin, filling about 3/4 of the way.
Bake in preheated oven for about 20 minutes, or until a toothpick inserted comes out clean.
Cool on wire racks.
