4 black cod fillets, each about 4 oz.
3 Tbs. soy sauce
1 Tbs. honey
1 Tbs. rice vinegar
1 Tbs. mirin
1 Tbs. sesame oil
1/2 oz. ginger, peeled and grated
2 garlic cloves, grated
1 lime, thinly sliced
freshly ground pepper
Place the cod in a single layer in a baking dish. In a small bowl, whisk together the soy sauce, honey, vinegar, mirin, sesame oil, ginger and garlic. Pour over the cod, ensuring that the fillets are evenly coated. Marinate at room temperature for at least 15 minutes or up to 30 minutes. Alternatively, refrigerate for up to 8 hours.
Preheat oven to 375 Fahrenheit. Place lime slices on the fish, and bake in the preheated oven for 10-13 minutes or until done. Check with a fork for doneness.
Serve with fresh ground pepper.
